A healthy and tasty meal for the whole family using maple syrup to make a favorite dish of fried rice even more special.

Ingredients
[4 - 6 servings]
Olive Oil
½-1 lb. Bacon
4 Eggs, beaten
1 cup Chopped Broccoli
4 cloves Minced Garlic
½ cup Frozen Peas
5 Chopped Scallions
4 cups Cooked Brown (or White) Rice
Salt and Pepper
¼ cup Soy Sauce
3 Tbsp Springboro Tree Farms Maple Syrup
2 Tbsp Butter
2 tsp Dried Onion Flakes
Pinch Red Pepper Flakes
Directions
- In a large skillet or pot, cook the bacon over medium-high heat until done. Remove, crumble, and set aside. Wipe excess grease out of pan.
- Add more oil if needed and pour the eggs into the pan. Cook until just set, remove from pan, and set aside. Wipe pan out if needed.
- Add 1 Tbsp oil to the pan and stir fry broccoli and garlic until just tender, about 4 minutes. Add peas and scallions and stir fry for 1-2 more minutes. Season with salt and pepper.
- Add cooked rice to pan and cook until heated through. Stir in bacon and eggs, then drizzle with Maple Soy Sauce (recipe follows.)
Maple Soy Sauce - In a small saucepan, combine soy sauce, Springboro Tree Farms maple syrup, butter, onion, and red pepper flakes. Bring to a boil and simmer gently for 2-3 minutes.
